For best juiciness and flavor ground bison should be 80 to 90% lean (10 to 20% fat content). Less than 10% fat results in a less juicy, drier tasting burger. Bison burgers with more than 20% fat tend to be greasy tasting. Most ground bison used in our testing was close to 90% lean.Our preference is for freshly ground bison meat, but previously frozen ground is a very close second. Hawaiian Barbecue Sauce for Barbecue Say Aloha to Linda's Hawaiian Barbecue Sauce for Barbecue Chicken and Ribs.  Linda's Busy Kitchen has a bunch of delicious recipes, but once I found this one, I looked no further. Ingredients: Servings: 6 1/3 cup unsweetened pineapple juice 1/4 cup low-sodium teriyaki sauce, I use Kikkomans 1/4 cup ketchup 1 garlic clove, minced 1 tablespoon brown sugar, firmly packed 1 tablespoon ginger, minced Hawaiian Barbecue Sauce for Barbecue Directions: In a lg. Dutch oven, combine ribs and cold water to cover. Bring to a boil over med-high heat. Cover, remove from heat, and let stand for 30 minutes. In a small saucepan, combine pineapple juice, teriyaki sauce, ketchup, garlic, and brown sugar. Bring to a boil, stirring, over med-high heat. When it starts to boil, reduce heat to low, and simmer for 10 minutes. Stir in ginger. Remove from heat, and let cool.

Beer Candied Bacon This one I have made before, and it is a show stopper.  I prefer to add a few maple wood chips to my charcoal and cook the bacon outside rather than in the oven the way that Tide and Thyme originally made it. I had my first taste of beer-candied bacon on a burger at my other favorite local brewpub, Evolution’s Public House. While I don’t really remember anything remarkable about the burger itself, that beer-candied bacon really resonated with me. And, I tucked it away in the “make sure to try at home” file. Lobster Tails on a Cedar Plank with Chive Lemon Aioli Ingredients 1 6" x12" cedar plank 5 6-8oz raw lobster tails 1 lemon, thinly sliced Fresh chives roughly chopped Salt and pepper Method Soak cedar grilling plank in water for at least one hour.
