Grilled Dessert? Try Pound Cake!

Several years back I posted a recipe for one of my favorite, and signature dishes. It was for Grilled Poundcake! Why not? I’ve Grilled Pizza? Why not cake?

That recipe has made its way to many of my chef and grilling demos and a few of my cookbooks have had variations of it. It even was posted on an official Coca-Cola website! So when a BBQ Dragon fan reached out to me for the recipe I was thrilled and decided to add it to the official BBQ Dragon Blog!

It’s a perfect match for my style of cooking and I’m sure any grill-guru will love it as well! I’m glad I can share it again!

Make it your Own!

First – about the cake. Sure, you can make your own pound cake. We use my grandmother’s version. But, the bakery dept at our local grocery store makes a mean version as well and it works fin in a pinch!

That goes for the ice cream as well. You can make a batch of homemade ice cream from scratch… or you can save some time and pick some up at the store. The great thing is that you can replace ingredients as needed. No strawberries? Use pineapple, peaches, or mandarin oranges.

If you fear placing slices of pound cake directly on a grill, try using a grilling basket or BBQ Dragon Grilling Mat. You can also use a sheet of heavy-duty non-stick foil to make a griddle-like surface.

Ingredients:

  • Cooking spray, for the grill
  • 4 slices pound cake
  • Spray butter or 2-3 tablespoons melted unsalted butter
  • 2-3 teaspoons brown sugar (optional)
  • 4 scoops ice cream
  • 1 cup sliced strawberries
  • 1/4 cup strawberry syrup
  • 1/3 cup toasted and sliced almonds

Directions:

Preheat the grill over medium heat. Coat the grill or foil with cooking spray. Coat the pound cake with spray butter or brush with the melted butter. Grill until the edges are browned and the slice is heated evenly. If desired, sprinkle the slices lightly with brown sugar before removing from the grill. Place a slice on a plate, top with the ice cream, sliced strawberries, strawberry syrup, and almonds.
