Hearty Steak House Flavor – with Coffee!
Don’t knock it until you’ve tried it. As it turns out, those cattle drive trail cooks new something about spices, and using what you have! At least – that’s what I’ve been told. Some Texas grilling gurus told me, when I was working on my Texas Hometown Cookbook, that cooks working on the trail, both current and back-in-the-day, used everything available and didn’t let anything go to waste.
That makes total sense!
And that included coffee grounds! You made as much coffee as you could from grounds and then added what was left over to dishes ranging from Chili to seasoning meat. And that included steaks!

Hearty Steak House Style Steak Seasoning… with Coffee!
Double as needed as this will store for several weeks in a sealed container.
Ingredients:
- 1/4 cup kosher salt
- 2-3 teaspoons ground black pepper
- 2 teaspoon paprika
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoon ground coffee
- 1 teaspoon ground thyme
- 1/2 teaspoon ground cumin
Instructions:
Combine all of the ingredients in a bowl and use as a rub on your favorite cut of steak for grilling! Apply seasoning several hours before grilling or even overnight for a deeper flavor.
